Sweet potato gnocchi – a gluten free alternative. Higher protein content from the almond flour in addition to the fiber content.
Golden beets – natural organ cleanser, beta-carotene that converts to vitamin A. In addition, beets contain potassium, copper, and fiber
Basil – vitamins A,C,K, manganese, iron, omega fatty acids, calcium
Protein was ground beef (can change to other protein such as chicken, shrimp, tofu, chickpeas)
Benefits of ground beef – lean ground beef is low in fats and high in rich protein and minerals.
Beet marinade
- 1-2 golden beet(s)
- 2 cups chicken brother
- 1/2 cup white wine
- 2TBSP olive oil
- 3 sprigs fresh thyme & basil
- S&P to taste
- 1 full juiced lemon
Gnocchi mixture
- 1/2 a shallot
- 2 cups sweet potato gnocchi
- Ground beef or protein of your choice
- 1 cup broccoli
- Marinated beets
- 1 Tbsp dried basil
- 1/2 Tbsp balsamic vinegar
- S&P to taste
- Olive oil as needed
- Lemon juice to taste
- Fresh basil as garnish
- Manchego cheese as garnish
Marinate beets in broth for 2hrs-overnight.
Take ground beef and season with salt, pepper, dried basil, garlic powder, and balsamic vinegar.
Mix together well. Cook beef on medium heat.
While beef is cooking, boil in salted water and drain gnocchi.
When beef begins to gain its color, add in marinated beets.
Saute until beets start to gain a golden crispy color. Add in gnocchi and wait until beets and gnocchi are fully golden.
Add in broccoli and avoid overcooking. Remove from heat once the bright green color arises.
Pour mixture into a bowl. Shred cheese along the top and add fresh basil leaves.
