Dates are my go to for sweet cravings. Dates are so beneficial that it is recommended to have some everyday! They are packed with fiber, anti-oxidants, anti-inflammatory properties, blood sugar control, and feeling fuller longer.
Cocoa nibs is the healthiest way to consume chocolate. Full of antioxidants that help fight off cancers, diabetes, heart disease, and excellent for brain health.
Almonds and coconuts are a great source of plant protein and healthy fats. In addition, almonds are packed with fiber that aid in digestion as well along with help curb cravings by feeling fuller longer. According to the dietary guidelines, just an ounce of almonds contributes to 1/8th of a person’s daily protein intake!
If you want a gluten free option, you can omit the oats. I know there are certified gluten free oats, but they are hard to find and can be pricey. Oats are naturally gluten free, but usually get processed in facilities that process wheat.
There are still many benefits to oats. It is one of the healthiest grains on earth, packed with fiber, reduce risk of heart disease, reduced risks of indigestion, great source of a complex carbohydrate. Complex carbs maintain their fiber and fuels the body with great energy.
Honey is a anti-inflammatory food that helps in a plethora of everyday bodily functions. It is said honey helps blood flow to the heart, lowering triglycerides, and lowering blood pressure. It is still high in sugar so it is good to limit the quantity by using small portions.
- Dates – 1 cup
- Raw almonds – 1/2 cup
- Cacao nibs – 2tbsp
- Oats – 1/2 cup
- Sea salt – 1/8 tsp
- Honey – 1 tsp
- Coconut shavings – As needed for rolling date balls in the shavings after they set
Remove pits from dates. Put dates in a mixing bowl. Add hot water on top of dates to rehydrate them. Let dates sit in hot water for about 10-15 minutes.
Drain dates.
In a food processor, add dates, oats, cacao nibs, oats, salt, and honey. Process until it become a sticky mixture, almost like dough.
Take the mixture and form them into balls. Lay the balls out evenly on a sheet pan and let set in the fridge for 20 minutes.
Remove balls from fridge and roll them in the coconut shavings.
Store in an airtight container in the fridge for up to a week.
