Sourdough toast is one of the easiest breads to digest due to its low gluten content. It is a naturally fermenting bread meaning there is significantly less yeast. Sourdough bread prevents spikes in blood sugar.
Avocado is a healthy fat source. Packed with omegas, fiber, and minerals. Avocados are an aid for the absorption of vitamins.
Pesto sauce is packed with many antioxidants and protein. A creative and nutritious way to add flavor to many simple meals. Pine nuts are one of the nuts with the highest protein content. Antioxidants and anti-inflammatory properties in the basil, garlic, and lemon juice.
High protein content with low calories and carbohydrates. Great quick source of protein with omega fatty acids.
Can substitute eggs for tofu scramble at additional protein source. Instructions will be listed below.
Pesto sauce:
- 3 bunches of fresh basil
- 1/2 cup spinach (optional)
- 1/2 lemon juiced
- 1/4 cup roasted pine nuts
- S&P to taste
- 1 Tbsp olive oil
Toast build:
- 1 slice sourdough toast
- Pesto sauce
- 1 avocado or avocado mash
- Cherry tomatoes
- Fresh lemon juice
- S&P to taste
- Feta, parmesan, or goat cheese (optional)
- Eggs – however many eggs you like any style you like
- Olive oil to taste
Pesto sauce
- Preheat oven to 350 ºF.
- On a sheet pan, lay out pine nuts evenly.
- Coat all pine nuts with a small amount of olive oil.
- Add pine nuts into the oven and toast until slightly golden and aromatic.
- Once pine nuts have been removed from oven, allow them to chill before putting them into the food processor. I recommend changing it out of the hot sheet pan so they can cool faster.
- After pine nuts have chilled, put all ingredients except the olive oil into the food processor to begin grinding down into a sauce.
- Once the pesto becomes a smooth puree, add in the olive oil. Quick blend to combine with pesto.
- Adjust seasoning and acidity to your preference. I enjoy mine with a lot of acidity. Others may like it with extra pine nut roasted flavor!
- Fresh pesto sauce can last up to 5 days in the fridge if stored properly in an airtight container.
Avocado toast build
- Toast sourdough to your liking.
- Once toasted, spread fresh pesto sauce on your toast.
- In a mixing bowl, take a while avocado and mash it with salt, pepper, lemon juice, and olive or avocado oil.
- Spread avocado mash evenly on your toast.
- Cut 2-3 cherry tomatoes in half and add them on top.
- Sprinkle feta or any crumble cheese your prefer (optional).
- Cook your eggs your favorite style.
